Dark Chocolate Brownies with Boozy Peppermint Mocha Frosting

Peppermint Mocha

Special occasions call for distinct differences to make the event memorable. Albeit small, these recognizable variations are what set the instances apart from the rest. The everyday chocolate brownies are upgraded to the Galentine’s Day batch when topped with decadent peppermint mocha boozy frosting made with Jackson Morgan Southern Cream.

 

Ingredients: 

Brownies:

1 ½ Cup Granulated Sugar 

2/3 Cup All Purpose Flour 

½ Cup Powdered Sugar, sifted 

2/3 Cup Double Dutch Dark Cocoa Powder, sifted 

½ Teaspoon Salt 

2/3 Cup Dark Chocolate Chips 

2 Large Eggs, room temperature

½ Cup Canola or Vegetable Oil 

1 Teaspoon Vanilla Extract 

2 Tablespoons Jackson Morgan Southern Cream, peppermint mocha 

 

Boozy Peppermint Frosting: 

½ Cup Salted Butter, softened 

2 Cups Powdered Sugar 

1 Teaspoon Espresso Powder 

1 Tablespoon Double Dutch Dark Cocoa Powder

1 Teaspoon Vanilla Extract 

2 Tablespoons Jackson Morgan Southern Cream in peppermint mocha 

Pinch of Salt 

Directions: 

Brownie Directions: 

Preheat the oven to 325 degrees. Grease a 8 x 8 square baking pan well and line with parchment paper. 

 

In a large bowl, combine the granulated sugar, flour, sifted powdered sugar,

sifted cocoa powder, salt, and chocolate chips. Make a well in the bowl, then whisk together the eggs, canola oil, vanilla extract, and Jackson Morgan Southern Cream. Once the wet ingredients are whisked together, start to incorporate the dry ingredients until all the ingredients are combined. Pour the batter into the greased pan and bake for 40-45 minutes. Allow to cool while you make the frosting. 

 

 

Frosting Directions: 

In an electric stand mixer fitted with a whisk attachment, cream the butter on medium/high speed for 3-5 minutes until smooth and creamy.  Add the powdered sugar one cup at a time to the butter and mix on low/medium until combined. Scrape down the bowl, then and the espresso powder, cocoa powder, vanilla, Jackson Morgan, and salt. Mix until you have frosting consistency. 

 

Once brownies have cooled, frost with frosting and enjoy.
