Lemon Pudding Cups

When you need a cool, smooth, satisfying dessert to serve this season, give good old fashioned pudding a go. Reminiscent of the sweet snack you remember from your childhood lunchbox, our version delivers a grown up twist stirred in. The lemon flavor of the pudding mix is enhanced by our Jackson Morgan Southern Cream in Lemon Icebox. Sip Tip: Prepare these simple yet tasty pudding cups ahead of time so you can put your focus elsewhere leading into your gathering.

Ingredients:

½ Cup Graham Cracker Crumbs 

4 Tablespoons Butter, Melted

3.4 Ounces Boxed Lemon Instant Pudding Mix

¼ Cup Jackson Morgan Southern Cream in Lemon Icebox, Cold

1 ¾ Cup Milk, Cold

Whipped Cream, Garnish

Shortbread Cookie, Garnish

Lemon Curl, Garnish 

Directions:

In a small bowl, combine graham cracker crumbs and melted butter. Stir until well combined. Divide the mixture evenly among mini dessert bowls, pressing firmly into the bottom to create a crust. Set aside.

In a separate bowl, whisk together the lemon instant pudding mix, Jackson Morgan Lemon Icebox, and milk until smooth and slightly thickened (soft set). Follow the package directions for setting time if needed. 

Spoon the lemon pudding mixture over the prepared graham cracker crusts. Garnish each cup with whipped cream, a shortbread cookie, and a lemon curl. Serve immediately or chill until ready to serve. Enjoy!
