Everyone has their favorite things about the fall season and the holidays it holds. In my opinion, one of the best parts of Thanksgiving is definitely the delicious turkey sandwiches on the following day. In the spirit of putting together a sensational leftovers spread for our Thanksgiving party, create a sandwich board with all the fixings. You can even style the pieces into the shape of a turkey if the presentation is your prerogative and you want to go the extra mile. I included rolls, lettuce, red onion, tomato, a variety of sliced cheeses, and of course turkey slices arranged to form a turkey shape.
A few tips on constructing the turkey: I used a half pear for the body, half green olives as eyes, and finished off my masterpiece with a cheese triangle beak complete with tomato gobbler. What a fun yet challenging and creative way to use leftover turkey to erect an edible sculpture. You can also get creative with your condiments. I mixed a few tablespoons of cranberry sauce with mayo to create a custom cranberry mayo sandwich spread. Feel free to add your favorite sandwich toppings or condiments to make this board your own.
