Favorite Slow Cooker White Chicken Chili Recipe

When winter weather starts to set in and the temperature takes a deep dive, chili is the perfect dinner choice to keep you warm. Nothing against tradition, but personally my taste buds are partial to white chicken chili. Give this family favorite recipe a spin. Enjoy a hot bowl with all of the toppings and tell me your taste buds are not at least slightly swayed. Follow up with a steaming cup of Jackson Morgan Southern Cream spiked hot chocolate for dessert.

Ingredients

1 Pound Boneless Skinless Chicken Breasts

1 Tablespoon of Olive Oil

1 Onion, Finely Chopped

2 Cloves of Garlic, Minced

1 Can Great Northern Beans, Rinsed and Drained

1 Can Cannellini Beans, Rinsed and Drained

1 Can Chopped Green Chiles

1 Tablespoon Ground Cumin

1 Teaspoon Chili Powder

½ Teaspoon Smoked Paprika

Salt and Pepper to Taste

32 Ounces Chicken Broth

12 Ounces Cream of Chicken Soup

1 Lime, Juiced

Toppings: Sour cream, shredded cheese, sliced jalapenos, lime wedges, and sliced avocado

Directions

In a skillet, add olive oil to a pan and over medium heat sauté the onion and garlic until translucent about 3 minutes.

Then add these ingredients to a slow cooker. Top with chicken, beans, seasonings, chicken broth, cream of chicken soup, and lime juice. Stir then cook on low for 6-8 hours. 30 minutes to an hour before serving, shred the chicken with two forks. Serve with toppings and enjoy warm.
