Boozy Peach Ice Cream Sandwiches

The Masters golf tournament is known for its palatable peach ice cream sandwiches which are said to be so delicious that they rival any other southern dessert. [Fun Fact: The Georgia Peach Ice Cream Sandwich, a creation of the Christie Cookie Co. in Nashville, Tennessee, is only sold at the club during the annual tournament.) Even if a trip to Augusta, Georgia is not on your weekend agenda, fear not. You can always count on your friends at Jackson Morgan to bring you boozy variations of your fan faves. This spring, whip up a batch of boozy ice cream sandwiches for your watch party guests to enjoy. Unlike the sandwiches served at the tournament, you can enjoy these peaches and cream sweet stacks all season long.

Ingredients: 

1 2/3 Cups Heavy Whipping Cream

1/3 Cup Jackson Morgan Southern Cream in Peaches and Cream 

1 Can Sweetened Condensed Milk (14 ounces)

Box of Shortbread Cookies

Directions: 

Before making the ice cream, place the bowl of a stand mixer and whisk attachment in the freezer for 30 minutes. 

 

Using the chilled bowl and whisk attachment, whisk the heavy cream on medium/high speed until stiff peaks form, approximately 3-5 minutes. Then on low/medium speed add in Jackson Morgan Southern Cream in peaches and cream and the can of sweetened condensed milk. Mix until combined. Place mixture in an ice cream tub for 8-12 hours until ice cream consistency. 

Assemble ice cream sandwiches, by placing a few tablespoons of ice cream between two short bread cookies. Enjoy immediately.
